MY DELICIOUS STREWBERRY PIE RECIPE

When the strawberry season is around in Queensland, l will run down to one of the farms in Caboolture in Northern Brisbane to harvest the quantity of strawberries l want and pay the Strawberry farmers. Kids love to the harvest season and the Northern farmers will permit us to enjoy the harvest. Queensland is the best! And there are plenty of amazing desserts to be made with strawberries
. During that famous season Strawberries will be sold cheap in the shops. Lift your hands up if you have never had a strawberry pie! have you ever had a strawberry pie?! Fresh strawberries baked in a buttery pie crust, with some well washed diced and grated in strawberries for thickness and texture. It tastes like heavenly and you can start dreaming of summer!

I made this strawberry pie to show off my crossing pastry skills l like to spy my strawberry pie through the glass in the oven bubbling red berries. I do the same with my Apple pie layers. I feed my eyes with the oven bubble effects. My next Apple pie move will be a complete French style or Russian style which is fantastic. So keep your eyes glued on my blog.

You must have noticed that l enjoy customising my recipes and twist them to my personality. And to be honest, sometimes l look at my work and pinch myself if l really did it myself. looks just the same! No one will have time to inspect and give me the credits l deserve but when you seat there, read my work and virtually eat with your eyes from my page, that’s the satisfaction and reward l get.
And l must say thank you.

1 pie shell (8″ size) baked & cooled, or crumb crust if preferred
1 pint fresh ripe strawberries, washed,stems removed, well drained

GLAZE INGREDIENTS


1 tsp red food colouring
3 tbsp cranberry gelatine
1/2 lemon juice
1/2 cup sugar
1/2 cup 7-up
4 tbsp cornstarch
A pinch of salt

RECIPE

1) You can buy you pie shell from the shop, or use a ready made fresh frozen dough (defrost) , or make your own home made dough from scratch. If your dough is freshly made you must pre bake it in the oven before using it.

2) Now Place your well washed strawberries in pie shell

Glaze:
Use a saucepan for the glaze. mix all ingredients together but not the the cornstarch and gelatine. Bring to a boil. Now remove from heat and add cornstarch and stir very well. Put back to heat and cook until it thickens. Now remove from heat and stir in the gelatine until gelatine dissolved. Let it to cool.

Glaze it all over fresh strawberries in pie shell. Completely cool, then chill in refrigerator overnight.

2nd Recipe.

Pour your mixture into the pie shell without gelatine and use some dough for the crossing. Cover your strawberry shell with a cris- crosse pattern on top. And bake until the crust is golden brown.

Serve with some tea.

These days l avoid anything too sweet because l am trying to live a healthy lifestyle but some sweet deserts are very ok for me with some tea and no sugar.
